Spicy omelette

What's better than breakfast?


The answer to that question is: nothing! Everyone loves a good breakfast that keeps you going for a few hours. Breakfast is an essential part of the day, so it's very important to eat something that will give you energy. An omelette is good, but what's even better is a spicy one!

What do you need:

- 4 eggs

- 1/4th of a teaspoon of turmeric (it's very present, so don't overdo it).

- 2 teaspoons limejuice

- 1 tablespoon coriander

- 1 tablespoon coconut oil

- 2 spring onions

- sea salt

- black pepper

- salad as preffered (sidedish)

What to do:

1. Put the eggs in a bowl and stir them. Stir in the lime juice, turmeric and coriander. Season with salt and pepper.

2. Heat the coconut oil in a frying pan over medium-high heat and fry the spring onion for 1 minute. Pour in the eggs and divide them over the bottom of the pan. Let the eggs bake for 1 minute, turn the omelette and fry the other side.

3. Fold the omelette in half and cut it in half. Sprinkle with coriander and serve with a salad and some lime juice (if preffered).
